Il mondo dei formaggi: PARMIGIANO REGGIANO - PARMISAN CHEESE

Quando si dice che il Parmigiano-Reggiano è "da almeno otto secoli un gran formaggio" non si afferma soltanto la sua antichissima origine; quello che si mette in evidenza è che questo formaggio è oggi esattamente com' era ben otto secoli fa, con lo stesso aspetto e la stessa straordinaria fragranza, fatto allo stesso modo, negli stessi luoghi, con i medesimi e sapienti gesti rituali. Testimonianze storiche dimostrano che già nel 1200-1300 il Parmigiano-Reggiano aveva raggiunto quella tipizzazione perfetta che si è conservata sostanzialmente immutata fino ai nostri giorni. Il che significa che la produzione casearia del comprensorio ha sicuramente origini molto più antiche, dal momento che si può ragionevolmente supporre che le caratteristiche peculiari del prodotto fossero state raggiunte molto tempo prima. Lo "standard" del Parmigiano-Reggiano è infatti un'evoluzione di antichi e straordinari formaggi, già citati da autori latini, determinata dal costante perfezionamento delle tecniche di caseificazione. I primi casari che ottennero da forme lavorate quei caratteri unici che rendono ancora oggi il prodotto inimitabile si resero subito conto di avere creato una opera d'arte; e da uomini saggi si contentarono della eccellenza qualitativa raggiunta. L' impegno e la dedizione erano stati premiati; ma come per ogni lavoro creativo non era mancata "la parte di Dio". Infatti, oltre alla mano dell'uomo, molti altri elementi indipendenti dai suoi sforzi avevano concorso a produrre il risultato perfetto. Sono elementi che raramente si riscontrano altrove e mai nella stessa irripetibile composizione: la formazione geologica del terreno, la particolarità degli allevamenti, quella dosata combinazione di circostanze agro-geo-ambientali ed umane che permette la produzione di un latte di pregio, diverso anche da quello di zone geograficamente vicine, l'unico latte che può dare origine a un formaggio eccezionale, capace di una maturazione lentissima, che lo carica di sapori inimitabili. E' invece da attribuire tutto agli uomini il merito di aver conservato orgogliosamente attraverso i secoli le patenti di nobiltà del Parmigiano-Reggiano e di non aver ceduto, nemmeno oggi - in cui tutto è tecnologia ed automazione - alla tentazione di semplificare le funzioni e le attività. Così i casari, oggi come una volta, continuano nella loro fatica e nel loro rischio, ostinandosi con lealtà e con fierezza a fare il loro formaggio solo con il latte, col caglio, col fuoco e con l'arte e perseverando nell'osservanza schietta e rigorosa di metodi secolari e nell'applicazione di una tecnica che è frutto di particolare vocazione e di maturata esperienza. Secondo il Platina, umanista cremonese del '400: "Due sono oggi in Italia le specie di formaggio che si contendono il primato: il 'marzolino', così chiamato dagli Etruschi perché si fa in Etruria nel mese di marzo e il Parmigiano nella regione cisalpina, che si può anche chiamare 'maggengo', dal mese di maggio". Un'altra citazione è tratta da un libro di Francesco Maria Grapaldo, dove si commentano passi di Vitruvio e di altri autori latini. Così recitano le traduzioni: "Formaggio Parmigiano: ai nostri tempi in Italia si dà un primato di qualità al formaggio Parmigiano, mentre un tempo si vantava l'abbondanza della lana. Di qui il distico: ...sono il nobile frutto del latte di Parma..". Non occorre compiere laboriose ricerche nelle nostre biblioteche per radunare documenti sull'antica origine del Parmigiano-Reggiano. Una delle citazioni più significative si trova addirittura nel Decamerone e non c'è dubbio - per le parole stesse con cui è espressa - che il Parmigiano, a cui Maso si riferisce nel descrivere a Calandrino il paese di Bengodi, è esattamente lo stesso formaggio che oggi si fregia del nome di Parmigiano-Reggiano: "et eravi una montagna di formaggio Parmigiano grattugiato, sopra la quale stavan genti, che niuna altra cosa facevan, che fare maccheroni e ravioli", con l' altra bella trovata che, una volta cotti, li facevan rotolare sul formaggio per condirli meglio. E quella di condire la pastasciutta con il Parmigiano è tradizione antica, come testimonia, già nel 1500, Frate Salimbene nelle sue"Le Cronache". Sempre al XVI secolo risale la testimonianza che afferma che "in questi tempi il primo vanto all'Italia è dato per il formaggio Parmigiano, mentre una volta glielo si attribuiva per l'abbondanza della lana"; del 1656 è il dizionario dei sinonimi di Francesco Serra, dove si dice che "i nomi del formaggio derivano dai luoghi dove lo si produce migliore; come il Parmigiano, che prende nome dal luogo e dalla bontà" (e cioè dal luogo in cui è veramente buono). Ma può colpire di più , come curiosità, la pagina in cui l'allora celebre Cristoforo di Messisbugo descrive - in un suo ricettario - la "cena privata" da lui fatta preparare in casa sua il 17 gennaio 1543. Era una cenetta tra amici, si direbbe oggi, con 20 persone appena e priva di pretese (sottolinea messer Cristoforo: "senza vitello e senza capponi") eppure "le frutte e confettioni", cioè il dessert, comprendevano "piatti 6 di formaggio Parmigiano" oltre a tutto il resto. Da notare la raffinatezza di servire il Parmigiano-Reggiano con uva fresca e pere: questo formaggio con la frutta (non solo le pere e l'uva, ma anche le mele, le pesche, le noci, i fichi, il kiwi, ecc.) viene riscoperto anche oggi come fine pranzo o come un dessert da buongustai.
Tra le testimonianze più curiose sono molte quelle indirette, come quella, ad esempio, riferita da vari biografi di Molière: il grande commediografo in tarda età si nutriva soprattutto di Parmigiano. Era quindi già in consonanza con i precetti della dietologia moderna che raccomanda questo formaggio anche ai bambini e agli anziani per il suo altissimo potere nutritivo, per la sua digeribilità e per la specialissima ricchezza in calcio e fosforo facilmente assimilabili. Ma le testimonianze più dirette sono quelle che si rinvengono manoscritte negli archivi di Reggio Emilia, di Parma, ed, in particolare, nei registri delle merci esportate ove si parla di partite di Parmigiano-Reggiano dirette in tutta l'Europa civile. Sarebbero molti gli episodi da citare; uno fra tutti, un brano di una lettera dal "Carteggio degli Anziani di Reggio Emilia", datata 21 gennaio 1536. Questi signori , raccogliendo le lamentele di "A. Patacino, nostro cittadino", esprimono una garbata protesta perchè "adducendo" Parmigiano-Reggiano a Venezia, "lo astringono a pagare il datio". Con il suo curioso sapore di attualità questa missiva merita di chiudere la nostra piccola scelta di citazioni. Ovviamente anche la storia recente del Parmigiano-Reggiano ha i suoi capitoli importanti; è, in sostanza la storia di come i circa 600 piccoli caseifici artigianali della zona tipica (che rappresentano circa novemila agricoltori produttori di latte) abbiano ottenuto dalla legge il riconoscimento della loro determinazione di conservare inalterato il metodo di lavorazione e l'altissimo livello qualitativo del prodotto; è la storia di come la garanzia di genuinità del Parmigiano-Reggiano sia oggi assoluta, in forza di norme precise, applicate con rigida autodisciplina di conformità e con rigoroso controllo. Ma non occorre raccontarla: i fatti parlano da soli, come appare nelle pagine che seguono, che illustrano la situazione di certificazione del processo produttivo presente, degno di un passato tanto nobile e antico.
Nel Parmigiano-Reggiano c'è una vera e propria concentrazione di sostanze nutritive, perchè un chilo di formaggio si ottiene da ben sedici litri del pregiatissimo latte della zona tipica, eccezionale per tenore di proteine e vitamine, per ricchezza di calcio e di fosforo. Il latte è, in se stesso, alimento completo di digeribilità relativamente facile, perchè contiene sostanze semplici ed essenziali di facile assimilazione da parte dell'organismo. Questa carica nutritiva si concentra nella pasta del Parmigiano-Reggiano e, nel lunghissimo periodo di invecchiamento naturale, resta viva, in un processo che ne esalta i suoi pregi organolettici e sviluppa contemporaneamente i caratteri che la renderanno ancora più facilmente assimilabile. L'affinamento è assolutamente naturale, non forzato da sostanze estranee o da alterazioni della temperatura ambiente; e questo è uno dei segreti che danno al Parmigiano-Reggiano, in grado eccellente, i tre pregi di cui si parlava: conservazione di un altissimo potere nutritivo, sapore inimitabile, facile digeribilità. Dai molti studi e ricerche, che sono stati compiuti in epoche diverse e che si sono recentemente moltiplicati, si può indicare - in sintesi - quale è il contenuto nutritivo medio del Parmigiano-Reggiano. Il 36,14% è costituito da sostanze proteiche; un indice questo superiore a quello di qualunque altro formaggio. Il suo contenuto medio in lipidi è basso, appena il 28,3%, mentre valori molto alti si registrano per il calcio (1,30%) e per il fosforo (0,70%). Le vitamine sono presenti in quantità eccezionalmente varia ed equilibrata. Il valore in calorie è di 392 per etto. In sintesi: un' altissima quota di elementi proteici e lipidi nobili, una concentrazione straordinaria di vitamine e sali minerali.
